Here are my dinner recommendations (and salads!) for the upcoming week (September 15-21, 2025).

DAY 1 (NEW): Creamy Chicken & Wild Rice Soup​

DAY 2: Pesto Salmon with cherry or grape tomatoes, Mozzarella cheese, basil pesto (homemade or store-bought), garlic, lemon, oregano, and toasted pine nuts

DAY 3: Korean Noodles with Marinated Beef & Vegetables

DAY 4: Greek Shrimp Salad (with tomatoes, cucumber, red onions, and feta cheese)

DAY 5: Sausage Stuffed Butternut Squash with Spinach, Pecans, and Cranberries​

DAY 6: Mexican Street Corn Black Bean Chicken Bake​

DAY 7: Asian Beef with Mushrooms and Snow Peas (or Snap Peas, Asparagus, or Broccoli)

SALAD 1: Strawberry Mango Salad with Spinach & Arugula​

SALAD 2: Spinach Salad with Fried Apples, Pecans, and Maple-Lime Dressing​

SALAD 3: Tomato Cucumber Lettuce Salad with Bacon and Blue Cheese Dressing​
