Here are my dinner recommendations (and salads!) for the upcoming week (October 20-26, 2025). DAY 1 (NEW!): Vegetable Barley Soup (with mushrooms, chickpeas, kale, tomato–herb broth). You can use brown rice, quinoa, or farro instead of barley.
DAY 2 (NEW!): Chicken Saltimbocca (Prosciutto, Sage, and White Wine Butter Sauce)
DAY 3: Stuffed Pasta Shells (with ricotta, mozzarella, parmesan, sautéed spinach, and nestled into a skillet of rich marinara sauce).
DAY 4: Marinated Grilled Pork Tenderloin (with Pineapple, Veggies, and Garlic Herb Butter Rice)
DAY 5: Greek Shrimp Orzo with Tomatoes, Feta, Olives
DAY 6: Oven-Baked Baby Back Pork Ribs (with a smoky spice rub, yellow mustard, homemade Kansas City barbecue sauce, or homemade Carolina Gold BBQ Sauce)
DAY 7: Greek Salmon Salad (with spinach, kalamata olives, green olives, cherry tomatoes, cucumber, red onion, and tangy feta)
SALAD 1: Berry Spinach Salad with Strawberries, Blackberries, Pecans, Feta, and Balsamic Glaze
SALAD 2: Greek Salad
SALAD 3: Beet and Mozzarella Salad with Arugula and Balsamic Dressing
DESSERT (NEW!): Apple Caramel Bundt Cake
NEW RECIPE: Bread Machine Garlic & Herb Loaf (with fresh rosemary, thyme, and real minced garlic). Only 10 minutes of prep!
