Here are my dinner recommendations (and salads!) for the upcoming week (October 27 - November 02, 2025). I also have two brand-new Fall desserts: Pumpkin Bundt Cake with Brown Sugar Glaze & Pecans, and Pumpkin Cream Cheese Muffins (scroll all the way down to see the desserts!) DAY 1 (NEW!): Slow-Cooker Ham and Lentil Soup (Make it in the slow cooker, on the stovetop, or in the Instant Pot.)
DAY 2: Easy Baked Mozzarella Chicken with Mushrooms and Tomato Sauce
DAY 3: Creamy Butternut Squash Pasta with Sausage and Spinach
DAY 4: Hungarian Mushroom Soup
DAY 5: Fajita-Style Shrimp Pasta with Bell Peppers
DAY 6: Southwestern Spaghetti Squash (stuffed with chopped chicken, black beans, tomatoes, corn, green chilies, green bell pepper, spaghetti squash flesh, and topped and broiled with shredded Cheddar on top)
DAY 7: Creamy Tuscan Salmon with Garlic, Spinach, Artichokes, Sun-Dried Tomatoes, and Capers (30 Minutes, One-Pan)
SALAD 1: Fall Harvest Salad (with roasted butternut squash, apple, pear, crunchy pecans, pumpkin seeds, pomegranate, spinach, feta cheese)
SALAD 2: Creamy Broccoli Cashew Salad with Apples, Pears, and Cranberries
SALAD 3: Persimmon Spinach Salad with Honey-Mustard Dressing (you can use mango, mandarins, apricots, plums, peaches instead)
DESSERT (NEW!): Pumpkin Bundt Cake with Brown Sugar Glaze & Pecans
