Well, hello, November, and here are my dinner recommendations (and salads!) for the upcoming week (November 3-9, 2025). I also have one brand-new dessert: banana bread chocolate chip muffins (with tall domes, bakery-style).

DAY 1 (NEW!): Baked Chicken Taquitos with 3 Sauces ( restaurant-quality crunch without deep-frying)

DAY 2: Lemon Chicken Orzo Soup

DAY 3: Creamy Bow-Tie Pasta with Spinach, Mushrooms, and Caramelized Onions

DAY 4: Italian Sausage Stuffed Spaghetti Squash with Spinach, Tomatoes, and Mushrooms

DAY 5: Shrimp Risotto with Spinach and Sun-Dried Tomatoes

DAY 6: Chicken Feta Pasta

DAY 7: Trout (or Salmon) Recipe with Garlic Lemon Butter Herb Sauce (30 Minutes, One-Pan)

SALAD 1: Grilled Chicken Salad with Arugula, Corn, Feta, Blueberries, Pecans, and Peaches (you can use mandarins, sliced oranges, or mango instead)

SALAD 2: Mexican Salmon Salad Bowl with Lettuce, Corn, Tomatoes, Cotija, and easy homemade Roasted Poblano Ranch Dressing

SALAD 3: Simple Beet & Spinach Salad with Goat Cheese and Pine Nuts (you can use boiled, roasted, canned, or pickled beets)

DESSERT (NEW!): Banana Chocolate Chip Muffins (Tall, with Big Domes, Bakery-Style)
