🍑 Meal Plan for July 21-27, 2025 🍑


Here are my dinner recommendations (and salads!) for the upcoming week (July 21-27, 2025).

DAY 1 (NEW RECIPE): Peach, Goat Cheese, Arugula, & Prosciutto Flatbread with Balsamic Glaze

DAY 2: Creamy Pesto Chicken Orzo with Mushrooms and Spinach (One-Pan, 30 Minutes)

DAY 3: Shrimp Scampi Linguine Pasta with Sun-Dried Tomatoes

DAY 4: Thai Red Curry Chicken Noodle Soup with Veggies (bell peppers, zucchini, carrots, onions). Dairy-free, gluten-free, packed with veggies and fiber.

DAY 5: Grilled Pork Chops with Dijon-Honey Herb Marinade and Glaze. Serve with grilled asparagus, corn, red bell peppers, or zucchini.

DAY 6: Pan-Seared Salmon with Chunky Olive and Caper Sauce

DAY 7: Creamy Garlic Parmesan Orzo (30 Minutes, One-Pan). Meatless main or a side to grilled meats.

SALAD 1 (NEW): Apple Cherry Green Salad with Raspberry Dressing

SALAD 2: Summer Fruit Salad with Peaches and Maple-Lime Dressing

SALAD 3: Beet & Spinach Salad with Mandarins, Pine Nuts, Feta and Honey-Mustard Lemon Dressing

DESSERT (NEW!): Blueberry Tiramisu (No-Bake Summer Dessert made with fresh blueberries)
