Here are my dinner recommendations (and salads!) for the upcoming week (July 14-20, 2025). DAY 1 (NEW RECIPE): Blueberry Feta Flatbread with Hot Honey: The Summer Snack Everyone Will Fight Over!
DAY 2 (NEW RECIPE): Mortadella Sandwich with Burrata Cheese and Pistachio Pesto (you can use fresh mozzarella instead of Burrata. Or, use prosciutto, thinly sliced ham, or turkey deli meat instead of mortadella)
DAY 3: Mediterranean Shrimp with Olives, Tomatoes, Spinach, and Mushrooms (30 Minutes, One-Pan) Gluten-free, dairy-free, low-carb, and protein-rich.
DAY 4: Pan-Seared Chicken Breasts with Garlic-Lemon Thyme Pan Sauce. Serve with my roasted garlic Parmesan mashed potatoes, my roasted broccoli and sweet potatoes, or cilantro-lime black bean rice)
DAY 5: Spinach and Ricotta Stuffed Shells (with mozzarella, parmesan, tomato sauce, and pine nuts)
DAY 6: Pan-Seared Flank Steak with Spinach Pesto and Buttery Sweet Potatoes (my husband's favorite dinner!)
DAY 7: Marry Me Ravioli Sauce (the best sauce for ANY store-bought ravioli)
SALAD 1: Summer Fruit Salad with Honey-Lemon Dressing (yellow peaches, red sweet cherries, blueberries, grapes, feta cheese)
SALAD 2: It's Beet Root Season! Try my Beet and Burrata Salad with Pine Nuts and Balsamic Dressing (you can use fresh mozzarella instead of burrata)
SALAD 3: Strawberry Orange Salad with Spinach, Arugula, Toasted Sliced Almonds, and Feta Cheeseβ
DESSERT (NEW!): Blueberry Coffee Cake with Streusel Crumble Topping and Lemon Cream Cheese Glaze
