Here are my dinner recommendations (and salads!) for the upcoming week (June 1-7, 2026).

DAY 1: Sausage and Veggies Skillet with Corn, Zucchini, Bell Peppers (30 Minute, One-Pan Meal)

DAY 2: Summer Tomato Soup with Cashews and Caramelized Onions​

DAY 3: Grilled Salmon (with Pineapple Tomato Avocado Salsa and Cilantro-Lime Rice)

DAY 4: Chicken Spaghetti with Burrata Cheese, Cherry Tomatoes, and Lemon Butter Garlic Sauce (You can use fresh soft Mozzarella instead of Burrata cheese.)

DAY 5: Marinated Grilled Pork Tenderloin (with Caramelized Pineapple, Grilled Veggies, and Garlic Herb Butter)

DAY 6: Italian Ravioli with Spinach, Artichokes, Capers, Sun-Dried Tomatoes​

DAY 7: Cilantro-Lime Chicken Bowls with Peach Salsa​

SALAD 1: Pear Salad with Blue Cheese and Walnuts (and the best dressing ever!)

SALAD 2: Grilled peach salad with arugula, avocado, berries, toasted nuts (and the best dressing!)

SALAD 3: Mexican Salmon Salad Bowl with Corn, Tomatoes, Lettuce (and the best dressing ever!)
