Here are my dinner recommendations (and salads!) for the upcoming week (May 25-31, 2026).

DAY 1: Baked Chicken Meatballs with Creamy Parmesan Spinach Orzo (and Garlic-Butter-White-Wine Sauce)

DAY 2: Salmon with Lemon Dill Sauce (15-Minute Meal)

DAY 3: Italian Wedding Soup (Beef + Pork Meatballs)

DAY 4: Thai Chicken Curry (with sweet potato, bell pepper, green beans, and spinach)

DAY 5: Turkish Pasta (with spiced ground beef tomato sauce, cool garlicky yogurt, and a sweet paprika-chili butter drizzle)

DAY 6: Crispy Baked Chicken Wings with 3 Homemade Sauces (Honey Mustard, Blue Cheese, and Honey Sriracha)

DAY 7: Shepherd's Pie made with ground beef (or lamb), topped with cheesy mashed potatoes, and baked in a cast-iron skillet until golden.

SALAD 1: Avocado Mango Salad with Arugula, Pine Nuts, and Honey-Lime Dressing

SALAD 2: Berry Spinach Salad with Blueberries, Raspberries, and Balsamic Dressing​

SALAD 3: Tomato Cucumber Avocado Salad with Mozzarella and Basil Pesto​
