🧡 SUMMER Meal Plan for May 18-24, 2026 🧡


Here are my dinner recommendations (and salads!) for the upcoming week (May 18-24, 2026). I also have a brand new summer dessert at the bottom!

DAY 1: Lemon Chicken Orzo (30 Minute, One-Pan)

DAY 2: Salisbury Steak with Mushroom Gravy (made with ground beef)

DAY 3: Sheet-Pan Maple Glazed Salmon with Roasted Asparagus​

DAY 4: Lentil Soup (healthy, high-protein, vegan, gluten-free, dairy-free, fiber-rich) I cook it on the stovetop, and I've included instructions for the Slow Cooker and Instant Pot.

DAY 5: The Best Crispy Baked Chicken (No Frying!) with the most amazing dip sauce!

DAY 6: Pan-Seared Filet Mignon with Mushroom Sauce​

DAY 7: Greek Shrimp with Lemon Rice and Tzatziki (Shrimp Rice Bowl)

SALAD 1: Tomato Cucumber Avocado Salad with Basil Pesto Dressing​
