💚 Meal Plan for June 15-21, 2026 💚


Here are my dinner recommendations (and salads!) for the upcoming week (June 15-21, 2026).

DAY 1: The Best Lemon-Garlic Chicken Pitas with Greek Yogurt Tzatziki, Tomato-Cucumber Salad, & Hummus

DAY 2: Cilantro-Lime and Black Bean Shrimp and Rice (30-Minute, One-Pan Meal)

DAY 3: One-Pan Creamy Chicken Orzo with Mushrooms, Spinach, and Basil Pesto​

DAY 4: Sheet-Pan Maple Glazed Salmon with Roasted Asparagus​

DAY 5: Salisbury Steak (Ground Beef Patties) with Mushroom Gravy. Serve with mashed potatoes or egg noodles.

DAY 6: Thai Coconut Chicken Curry with Sweet Potatoes and Green Beans​

DAY 7: Stuffed Jumbo Pasta Shells (with a creamy mix of ricotta, mozzarella, parmesan, sautéed spinach, and nestled into a skillet of rich marinara sauce.)

SALAD 1: Summer Peach & Blackberry Salad​

SALAD 2: Greek-inspired Shrimp Salad

SALAD 3: Summer Stone Fruit Pasta Salad with fresh cherries, peaches, feta cheese, and arugula​
