DAY 2: Chicken Thighs with Mushroom Rice (One-pan meal featuring bone-in, skin-on chicken thighs cooked over jasmine rice, which soaks up all the rich juices from the chicken.)
DAY 3: Cilantro Lime Shrimp Scampi Pasta (You can use fresh basil instead of cilantro)
DAY 4: Italian Sausage Potato Soup (One-pot meal with tender potatoes, garlic, onions, carrots, and fresh spinach)
DAY 5: Creamy Pesto Gnocchi with Veggies (with cherry tomatoes and asparagus, 30-minute, one-pan meal)
DAY 6: Shrimp Tacos with Mango Salsa (Serve with my cilantro-lime black bean rice or Mexican street corn pasta salad)
DAY 7: Thai Zucchini Noodles (MEATLESS meal or side. Serve with salmon, shrimp, or chicken)
SALAD 1: Plum Spinach Salad with Feta Cheese, Pecans, and Honey-Lemon Dressing
SALAD 2: Creamy Broccoli and Cauliflower Salad with Cheddar Cheese, Bacon, Cranberries, Carrots, Red Onions
SALAD 3: Green Salad with Apples & Blue Cheese (with Pecans, Mixed Greens, and Honey-Lemon Dijon Mustard dressing)
