Here are my dinner recommendations (and salads!) for the upcoming week (June 23-29, 2025). DAY 1 (NEW RECIPE): Tequila-Lime Shrimp Skewers with Veggie-Pineapple Skewers (on the Grill. Prep time 10 min.; marinate for 15 minutes, cook time: 25 min.)
DAY 2 (NEW RECIPE): Herbed-Citrus Grilled Flank Steak with Mango Avocado Salsa (with the best homemade marinade: fresh rosemary and thyme with cumin, garlic, tamari, and a splash of both lime and orange juice, balsamic vinegar, olive oil). Serve with cilantro-lime black bean rice.
DAY 3 (NEW RECIPE): Baked Chicken Nuggets (No deep frying. Serve with my 3 homemade sauces that you can find in my baked chicken wings recipe)
DAY 4: Thai Coconut Curry Salmon
DAY 5: Mexican Chicken Pasta (Serve it topped with Pico de Gallo)
DAY 6: Mac and Cheese with Sausage and Bell Peppers (30-Minute, One-Pan Recipe). Serve with spinach ricotta 4-cheese flatbread.
DAY 7: Chicken with Peaches and Honey-Lemon Sauce (30 Minutes, One-Pan)
SALAD 1: Strawberry Spinach Salad with Poppy Seed Honey-Lemon Dressing
SALAD 2: Peach Mozzarella Salad with Basil, Pine Nuts, Prosciutto, and Balsamic Dressing
SALAD 3: Italian Garden Salad (sun-dried tomatoes, artichokes, cherry tomatoes, pine nuts, Parmesan cheese, and a mix of baby spinach + baby arugula)
