Here are my dinner recommendations (and salads!) for the upcoming week (June 16-22, 2025). And, Happy Father's Day! πŸŽŠπŸŽ‰πŸŽˆ

DAY 1: Korean Stir-Fried Beef Noodles (Japchae)​

DAY 2: Thai Chicken Meatball Curry​

DAY 3: Lemon Shrimp Orzo with Asparagus and Capers (serve with homemade garlic bread)

DAY 4: Mexican Street Corn Black Bean Chicken Bake (with Cotija or Feta Cheese. One-pan recipe, 30 minutes baking time. Serve topped with Pico de Gallo)

DAY 5: Mediterranean Salmon with Spinach, Artichokes, Sun-Dried Tomatoes, and Capers (Serve it with Parmesan basil rice)

DAY 6: Prosciutto Pasta with Peas and Parmesan Cheese (You can also use bacon bits or chopped cooked bacon. Serve with Strawberry Basil Fizz Mocktail)

DAY 7: Linguine with Spinach and Sun-Dried Tomato Cream Sauce​

SALAD 1: Creamy Chicken Pasta Salad with Spinach, Cherry Tomatoes, Avocado, and White Cheddar​

SALAD 2: Mango Salad with Spinach, Blueberries, Walnuts, and Feta Cheese​

SALAD 3: Apricot Spinach Salad with Cherries, Pecans, and Feta Cheese​
