πŸ’š Meal Plan for Apr. 21-27, 2025 πŸ’š


Here are my dinner recommendations (and salads!) for the upcoming week (Apr. 21-27, 2025).

DAY 1: Creamy Italian Sausage Pasta with Bell Peppers (30-Minute One-Pan Meal. Use store-bought marinara sauce, jarred canned tomato basil sauce, arrabiatta, etc)

DAY 2: Shrimp Pesto Pasta (with creamy basil pesto sauce, roasted cherry tomatoes, and toasted pine nuts)

DAY 3: White Chicken Chili (cook chicken in the soup, use rotisserie or leftover already-cooked chicken)

DAY 4: Cilantro Lime Honey Garlic Baked Salmon (Use fresh basil if you don't like cilantro)

DAY 5: Meatless (Vegetarian) Ramen Noodles with Spinach, Mushrooms, Cashews, Sesame Seeds, and a homemade honey-sesame Sriracha-flavored sauce. You can use snap peas, asparagus, or green beans as an alternative to spinach.

DAY 6: Lime Chicken with Garlic-Lime-Brown-Sugar Pan Sauce (Serve it with rice, pasta, ravioli, tortellini, veggies, beans, cauliflower rice, mashed potatoes. It's great with my cilantro-lime black bean rice)

DAY 7: Creamy Spinach and Mushroom Orzo (MEATLESS meal or side. To make it gluten-free, use GF orzo or long-grain rice, or Arborio rice)

SALAD 1: Strawberry Spinach Salad with Quinoa, Cashews, and Balsamic Dressing (peaches are optional. Or, you can sub with mango, apricots, or nectarines.)

SALAD 3: Apple Cranberry Spinach Salad with Pecans, Avocados (and Balsamic Vinaigrette Dressing)
