🍁 Meal Plan for Oct. 6-12, 2025 🍁


Here are my dinner recommendations (and salads!) for the upcoming week (October 6-12, 2025). 🍁 🍁

DAY 1: Grilled (or Pan-Seared) Salmon (with chipotle-honey-lime sauce, rice, and fresh Pineapple Tomato Avocado Salsa)

DAY 2: Creamy Butternut Squash and Sausage Soup with Orzo and Spinach (30-Minute, One-Pot)

DAY 3: One-Pan Creamy Chicken Orzo with Mushrooms and Spinach​

DAY 4: Braised Pork Ragu Pappardelle​

DAY 5: Mediterranean Shrimp (with paprika and Italian seasoning, alongside briny olives, juicy tomatoes, garlic, mushrooms, spinach, and a white wine sauce. It's a gluten-free, dairy-free, low-carb, and protein-rich 30-minute one-pan meal.)

DAY 6: Beef Bulgogi (Korean BBQ Beef)​

DAY 7: Thai Curry Chicken Meatballs with Bell Pepper and Zucchini​

SALAD 1: Strawberry Spinach Salad​

SALAD 2: Creamy Broccoli and Cauliflower Salad with Corn, Bacon, Carrots, Red Onion, and Sharp Cheddar​

SALAD 3: Healthy Quinoa Salad with Roasted Butternut Squash, Pine Nuts, Caramelized Onions, and Feta cheese (you can use roasted sweet potatoes or yams)
