Here are my dinner recommendations (and salads!) for the upcoming week (September 22-28, 2025). Starting today, the weekly meal plan will go out Saturday mornings instead of Sundays, so you have extra time to plan ahead if using my recipes. And, tomorrow is officially Fall! π π DAY 1: Thai Coconut Curry Shrimp Soupβ
DAY 2: Chicken and Wild Rice with Roasted Sweet Potatoes and Portobello Mushroomsβ
DAY 3: Greek Orzo (meatless main, or serve it as a side with protein, or as a salad)
DAY 4: Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage (30-Minute, One-Pan). You can also use canned pumpkin puree.
DAY 5: Creamy Spinach Mushroom Tortellini with Caramelized Onionsβ
DAY 6: One-Pot Vegetable Beef Soupβ
DAY 7: Creamy Garlic Parmesan Orzo with Green Peas and Crispy Prosciutto (or bacon)
