Here are my dinner recommendations (and salads!) for the upcoming week (June 9-15, 2025). DAY 1: Chicken Marsala Fettuccine
DAY 2: Grilled Flank Steak Salad (with baby greens, arugula, cherry tomatoes, red onions, mozzarella pearls, avocado, pine nuts, and a balsamic glaze)
DAY 3: Thai Shrimp Coconut Noodle Soup
DAY 4: Mediterranean Chicken Provençal (chicken tenderloins braised in a savory sauce of burst cherry tomatoes, green and Kalamata olives, shallots, garlic, white wine, lemon, and herbes de Provence)
DAY 5: Trout (or Salmon) with Lemon Caper Sauce (Serve it with my cilantro-lime black-bean rice)
DAY 6: Classic Mac and Cheese with Bacon and Caramelized Onions
DAY 7: Creamy Mushroom Pork Chops (30-Minute One-Pan Meal. Low-carb, gluten-free, high-in-protein). Serve with my lemon garlic green beans or roasted garlic mashed potatoes.
SALAD 1: Summer Fruit Salad with Honey-Lime Dressing
SALAD 2: Strawberry Spinach Salad
SALAD 3: Grilled Peaches (serve with vanilla ice cream and honey)
I also have 1 NEW DESSERT this week:Strawberry & Blueberry Crisp (with a crispy oat, pecan, almond, and brown sugar crumble)
