Well, hello, June 2025! The grilling season is here! Here are my dinner recommendations (and salads!) for the upcoming week (June 2-8, 2025).

DAY 1 (NEW RECIPE): Grilled Pork Chops with Dijon-Honey Herb Marinade and grilled veggies (asparagus, bell peppers, zucchini, and corn)

DAY 2 (NEW RECIPE): Pan-Seared Salmon with Chunky Olives, Capers, and Lemon Sauce (30 Minutes, One-Pan). Serve it with quinoa, broccoli, couscous, rice, orzo, or my cilantro-lime black-bean rice.

DAY 3 (NEW RECIPE): Marry-Me Baked Chicken Meatballs with Orzo (with creamy sun-dried tomato and spinach sauce)

DAY 4: Garlic Shrimp Pasta with Sun-Dried Tomato Cream Sauce ​

DAY 5: Honey Lime Chicken Thighs (Serve it with my cilantro-lime black-bean rice or my Mexican street corn pasta salad)

DAY 6: Sausage Frittata with Spinach and Mushrooms (30 Minutes, One-Pan. Great for meal prep! Make it once; eat it for days! It's gluten-free, keto, low-carb, and packed with protein and veggies! Don't overcook it!)

DAY 7: Bacon, Cream Cheese, Cheddar Baked Chicken Breasts (Simple, 30-Minute One-Pan Meal. Keto, low-carb, gluten-free, high-in-protein). Serve with my lemon garlic green beans or roasted garlic mashed potatoes.

SALAD 1: Creamy Broccoli Cashew Salad with Apples, Pears, and Dried Cranberries​

SALAD 2: Asparagus Tomato Salad with Burrata Cheese and Pine Nuts (you can use fresh Mozzarella instead of Burrata)

SALAD 3: Spinach Salad with Honey-Mustard Lime Vinaigrette (with pecans, mandarin oranges, pomegranate seeds, and dried cranberries)
