💚 Meal Plan for May 26 - June 1, 2025 💚


Here are my dinner recommendations (and salads!) for the upcoming week (May 26 - June 1, 2025). I hope you have a wonderful Memorial Day weekend!

DAY 1 (NEW RECIPE): Chicken Piccata Orzo with Spinach, Lemon, and Capers (30 Minute, One-Pan)

DAY 2: Blackened Shrimp (20 Minutes, One-Pan. Serve it with pasta, rice, risotto, over salad, or roasted vegetables. Or, with tacos, burritos, or enchiladas)

DAY 3 (NEW RECIPE): Chicken Shawarma Bowl (with turmeric rice, chickpeas, feta, homemade tzatziki, and a fresh tomato-cucumber salad)

DAY 4: Lemon Pepper Garlic Rainbow Trout (or Salmon) and Asparagus (baked on a sheet pan in the oven. Healthy, low-carb, and gluten-free 30-minute ONE-PAN meal.)

DAY 5: Chicken and Corn Pasta Salad with Bacon and Creamy Basil Pesto Dressing

DAY 6: 30-Minute, One-Pan Mexican Ground Beef (with tomatoes, black beans, corn, mild green chiles, and green onions. High in protein, gluten-free, and dairy-free! Use it as taco meat, to stuff the burritos, or add it to casseroles or pasta. Or, simply serve with sheet-pan nachos, corn tortillas or rice)

DAY 7: Italian Fusilli with Spinach, Artichokes, Sun-Dried Tomatoes, Capers, Garlic, and Pine Nuts

SALAD 1: Summer Peach & Spinach Salad with Blueberries, Feta, and Pine Nuts (you can use nectarines, apricots, or mango instead of peaches)

SALAD 2: Greek-Inspired Salad (with cherry tomatoes, cucumber, red onions, avocado, capers, and feta)

SALAD 3: Arugula Salad with Pears, Apples, Cashews, and homemade Balsamic Vinaigrette

I started venturing into cocktails (specifically margaritas)!

Passion Fruit Margarita (you can also use mango juice. We like to add a touch of Mezcal.)

Blood Orange Margarita (can be made with regular orange juice)
