DAY 1: 30-Minute Pesto Chicken Tortellini & Veggies​

DAY 2: Creamy Shrimp Pasta with Bacon, Spinach, Tomatoes, and Parmesan​

DAY 3: One-Pan Chicken Thighs with Cilantro-Lime Black Bean Rice​

DAY 4: Ham Spaghetti Pasta with Spinach, Burrata Cheese, and Lemon Butter Sauce (light Spring pasta)

DAY 5: Hasselback Chicken stuffed with Spinach, Parmesan, Mozzarella, Cream Cheese, and Bacon (KETO, LOW-CARB, GLUTEN-FREE, PROTEIN-RICH)

DAY 6: Salmon with Mango Salsa​

DAY 7: Bacon Pineapple BBQ Chicken with Red Onions and Mozzarella Cheese​

SALAD 1: Apple Spinach Salad​

SALAD 2: Tomato Burrata Salad with Basil Pesto​

SALAD 3: Mango Salad with Spinach, Blueberries, Walnuts, and Feta Cheese​

MY BIRTHDAY:

It’s been a little while since I’ve shared a personal update, so with my birthday this week, I figured it was the perfect moment to pop in and say hello again.

My wonderful husband completely surprised me with this gorgeous cakeβ€”I definitely wasn’t expecting it! I had actually planned to make a nutty berry crisp topped with ice cream (stay tuned, the recipe will be up soon)… but now I’ve got cake instead!

I also want to take this moment to THANK YOU, the readers of my food blog, for being here, for trying out my recipes, and for being part of this amazing community. I’m beyond grateful for your supportβ€”it’s what keeps me motivated, inspired, and doing what I love.
