Here are my dinner recommendations (and salads!) for the upcoming week (Apr. 07-13, 2025).

DAY 1: Tomato Spinach Chicken Spaghetti (DAIRY-FREE: no cream, no cheese)

DAY 2: Cilantro-Lime Shrimp (use basil if you don’t like cilantro. This 30-minute one-pan recipe is gluten-free, low-carb, keto, and high in protein. Serve it over pasta, with ravioli or tortellini, or with tacos or enchiladas.)

DAY 3: Sausage White Bean Soup with Spinach and Carrots (30-minute one-pan recipe. Gluten-free. Use coconut milk instead of heavy cream to make it dairy-free)

DAY 4: Trout Recipe with Garlic Lemon Butter Herb Sauce (You can use salmon instead of trout. Gluten-free, keto, low-carb, high-in-protein, 30-minute one-pan meal.)

DAY 5: Mediterranean Chicken with Sun-Dried Tomatoes, Artichokes, and Capers (made with skinless, boneless chicken breasts. Serve with pasta, tortellini, or ravioli.)

DAY 6: Creamy Spinach Gnocchi with Smoked Paprika Garlic Sauce (30-minute one-pan meatless meal)

DAY 7: Beef Bulgogi (Korean BBQ Beef made easy! 10 minutes of prep + idle time to marinate + 10 minutes of cooking)

SALAD 1: Apple Spinach Salad with Honey-Mustard Lemon Dressing​

SALAD 2: Strawberry Spinach Salad with Quinoa, Blueberries, and Mandarin Oranges​

SALAD 3: Tomato Cucumber Avocado Salad with Mozzarella and Basil Pesto​
