Are we grilling yet this time of year? I hope the weather is warming up wherever you are and youβre easing into BBQ season! Here are my dinner (and salad!) picks for the upcoming week (April 20-26, 2026). DAY 1: Grilled Pork Chops with Dijon-Honey Herb Marinade
DAY 2: Pan-Seared Salmon with Chunky Olive & Capers Sauce (30 Minutes, One-Pan). Serve it with quinoa, broccoli, couscous, rice, orzo, or my cilantro-lime black-bean rice.
DAY 3: Marry-Me Baked Chicken Meatballs with Orzo (with creamy sun-dried tomato and spinach sauce)
DAY 4: Garlic Shrimp Pasta with Sun-Dried Tomato Cream Sauce β
DAY 5: Honey Lime Chicken Thighs (Serve it with my cilantro-lime black-bean rice or my Mexican street corn pasta salad)
DAY 6: Creamy Chicken Thighs and Gnocchi with Spinach, Mushrooms, and Creamy Smoked Paprika Garlic Sauce (30 Minutes, One-Pan)
DAY 7: Creamy Garlic Parmesan Orzo (30 Minutes, One-Pot). Meatless meal or side dish for steaks, hamburgers, chicken, anything!
SALAD 1: Creamy Broccoli Cashew Salad with Apples, Pears, and Dried Cranberriesβ
SALAD 2: Asparagus Tomato Salad with Burrata Cheese and Pine Nuts (you can use fresh Mozzarella instead of Burrata)
SALAD 3: Spinach Salad with Honey-Mustard Lime Vinaigrette (with pecans, mandarin oranges, pomegranate seeds, and dried cranberries)
