Here are my dinner recommendations (and salads!) for the upcoming week (Apr. 13-19, 2026). DAY 1 (NEW!): Vegetable Quinoa Soup (Healthy, MEATLESS, vegan, vegetarian, high-protein, dairy-free, gluten-free, one-pot)
DAY 2: Creamy Italian Sausage Gnocchi with Spinach and Tomato Sauce (30-Minute One-Pan Meal. Use store-bought marinara sauce, jarred canned tomato basil sauce, arrabiatta, etc)
DAY 3 (NEW!): Mulligan Beef Stew (a rustic one-pot PROTEIN-PACKED and LOW-CALORIE soup featuring stew beef, potatoes, carrots, corn, peas, and a rich, savory beef broth)
DAY 4: Mexican Chicken Pasta with Bell Peppers and Green Chiles​
DAY 5: Creamy Chicken Thighs with Tomato Basil Spinach Sauce and Parmesan (30-minute one-pan meal made with skinless boneless chicken thighs. You can use breasts, too.)
DAY 6: Asian Salmon & Noodles with Mushrooms and Snow Peas (with homemade honey-sesame Sriracha flavored sauce. You can use snap peas, asparagus, or green beans)
DAY 7: Steak Enchiladas with Beans, Green Chiles, Pepper Jack Cheese, and Pine Nuts (perfect for leftover grilled steak, grilled chicken, or rotisserie chicken. You can use corn, flour, almond, or cassava tortillas.)
SALAD 1: Strawberry Spinach Salad with Bacon and Toasted Almonds​
SALAD 2: Beet & Spinach Salad with Mandarin Oranges, Pine Nuts, Feta, and Honey-Mustard Lemon Vinaigrette (great for cooked, boiled, roasted, marinated, or canned beets)
SALAD 3: Pear & Pomegranate Spinach Salad with Pecans, dried Cranberries, Feta, and Maple-Lemon Dijon Mustard Dressing​
