Here are my dinner recommendations for next week (Mar.10-16, 2025). Iβm in New Orleans for the next seven days! The first three will be spent at a food blogger conference with amazing fellow bloggers, and afterward, my husband and I will take the rest of the week to explore the local food and cultureβit's our first time here! Wishing you a fantastic week! DAY 1: The Best Baked Chicken Wings (with 3 sauces)
DAY 2: Asian Beef with Mushrooms and Snow Peas (or snap peas or green beans or broccoli)
DAY 3: Creamy Mexican Street Corn Shrimp (30 Minutes, One-Pan)
DAY 4: Chicken Florentine Bake (chicken breasts stuffed on top with easy homemade spinach-artichoke dip, chopped sun-dried tomatoes, and baked to perfection with Mozzarella cheese on top)
DAY 5: Sheet-Pan Garlic Parmesan Crusted Salmon and Asparagus (the key is not to overcook the salmon so it's not dry. Check salmon for doneness after 15 minutes of baking! If done properly, the salmon will be tender and flakey with crunchy Parmesan on top)
DAY 6: Italian Sausage Pasta with Spinach, Artichokes, and Sun-Dried Tomatoes (30-minute ONE-POT wonder that's dairy-free; there is no cream and no cheese.)
DAY 7: Stuffed Spaghetti Squash with spicy Italian Sausage, Spinach, Apples, Cheddar, and Pepper Jack Cheese (you can use any other large squash, such as butternut, acorn, etc. Or, make an "unstuffed" version of this by mixing roasted squash flesh (or slices) with this stuffing)
SALAD 1: Greek-inspired Salad (with traditional ingredients: tomatoes, cucumber, red onions, and feta cheese. I also added creamy avocado and briny capers.)
SALAD 2: Apple Cranberry Spinach Salad with Cashews and Balsamic Vinaigretteβββ
SALAD 3: Tomato Cucumber Avocado Salad with Basil Pesto Dressingβ
