Wow—we’re one week away from Easter, and April is just two days away! How is that even possible?! While time keeps flying by at the speed of light, here are my dinner (and salad) picks for March 30–April 5, 2026. I also have 2 brand-new Easter dessert recipes at the bottom of the newsletter, after the salads. ☘️ Julia. DAY 1: Tomato Spinach Chicken Spaghetti
DAY 2: Spring Salmon Dinner with Basil Pesto, Orzo, Tomatoes, and Mozzarella
DAY 3: Creamy Italian Sausage Tortellini Soup
DAY 4: Chicken Marsala Fettuccine with Mushrooms
DAY 5: Honey Garlic Shrimp in 30 Minutes. Healthier and tastier than take-out! Serve with brown rice, quinoa, or cauliflower "rice. Or, with my cilantro-lime black bean rice.
DAY 6: Pan-Seared Steak with Mushroom Sauce (made with white wine, beef broth, Dijon, and Parmesan). I served it with roasted garlic and roasted asparagus. YUM!
DAY 7: Quick, Asian Ground Beef Ramen Noodles with Veggies in 30 Minutes!
SALAD 1: Spring Tomato Burrata Salad with Fresh Homemade Basil Pesto
SALAD 2: Crunchy Asian Cucumber Salad with Veggies and Peanut Dressing
SALAD 3: Arugula Salad with Pears, Apples, Cashews, and Balsamic Vinaigrette
DESSERT (NEW): Easter Brownies with Mini Milk Chocolate Eggs (nice flavor contrast between dark brownie and large chunks of milk chocolate inside)
DESSERT (NEW): Double Chocolate Easter Cookies (with Easter-style pastel M&Ms. Brownie-like, soft and fudgy cookies with crispy edges)
