Here are my dinner recommendations (and salads!) for the upcoming week (Mar. 24-30, 2025).

DAY 1: Creamy Chicken Orzo with Mushrooms and Spinach (30 Minutes, One-Pan)

DAY 2: Cilantro-Lime and Black Bean Shrimp and Rice (30-Minute, One-Pan Meal)

DAY 3: Pepperoni Chicken Bake with Basil Pesto Tomato Sauce and Mozzarella cheese (Low-carb, gluten-free. Just like pizza but with chicken instead of the crust!)

DAY 4: Creamy Tuscan Salmon Pasta with Sun-Dried Tomatoes and Spinach​

DAY 5: Chicken and Wild Rice with Roasted Sweet Potatoes and Mushrooms​

DAY 6: Italian Sausage and Tortellini with Sweet Potatoes and Bell Peppers in 30 minutes! Perfect for meal prep and freezing!

DAY 7: Pan-Seared Flank Steak with Green Sauce and Mashed Sweet Potatoes (inspired by Argentina’s famous chimichurri but with a twistβ€”it’s made with spinach, garlic, balsamic vinegar, olive oil, and a blend of spices - all easily available ingredients)

SALAD 1: Tomato Basil Avocado Mozzarella Salad with Balsamic Dressing​

SALAD 2: Spinach and Fruit Salad with Maple-Lime Dressing​

SALAD 3: Creamy Broccoli Bacon Salad with Pecans, Cranberries, and Raisins​
