We’re approaching the last week of winter! 💘 And it’s time for another weekly meal plan. After watching the athletes push themselves during the 2026 Winter Olympics, it’s time to nourish ourselves, too. Here are my dinner (and salad) picks for Feb. 23–Mar. 1, 2026. And I also added 3 brand-new simple desserts at the end of the newsletter!!❤️❤️ Julia DAY 1: Apple Cider Braised Pork Shoulder
DAY 2: Lemon-Garlic Chicken Pitas with Greek Yogurt Tzatziki, Tomato-Cucumber Salad, & Hummus
DAY 3: Classic chili with ground beef, beans, a three-pepper base (bell pepper, poblano, and jalapeño), and fire-roasted tomatoes.
DAY 4: Stuffed Pasta Shells (a creamy mix of ricotta, mozzarella, parmesan, sautéed spinach, and nestled into a skillet of rich marinara sauce.)
DAY 5: Creamy Mozzarella Shrimp Pasta
DAY 6: Baked Chicken Meatballs with Creamy Parmesan Spinach Orzo (and Garlic-Butter-White-Wine Sauce)
DAY 7: Chicken Thighs with Creamy Bacon Mushroom Thyme Sauce (this is one of my oldest recipes that used to be super viral on Pinterest)
SALAD 1: Creamy Broccoli Cashew Salad with Apples, Pears, and Dried Cranberries
SALAD 2: Berry Spinach Salad with Blackberries, Strawberries, Pecans, Feta, and Balsamic Glaze
SALAD 3: Italian Orzo Salad
