It’s time for another meal plan! Here are my dinner (and salad) picks for the week of Feb. 9 - Feb. 15, 2026. ❤️🎄 Julia DAY 1 (NEW!): Slow Cooker Salsa Verde Chicken (high-protein, gluten-free, dairy-free, nut-free, and egg-free)
DAY 2: Mexican Street Corn Black Bean Chicken Bake
DAY 3: Shrimp Risotto with Sun-Dried Tomatoes & Spinach
DAY 4: Chicken Spaghetti with Burrata Cheese, Cherry Tomatoes, Pine Nuts, and Lemon Butter Garlic Sauce
DAY 5: Creamy Sausage Gnocchi with Spinach and Tomato Sauce (30 Minutes, One-Pot)
DAY 6: Salmon with Cilantro-Lime Rice and Pineapple Tomato Avocado Salsa
DAY 7: Southwestern Ground Beef Stuffed Butternut Squash (you can also use spaghetti squash, acorn squash, or any other winter squash)
SALAD 1: Blueberry Mango Spinach Salad with Walnuts and Feta Cheese
SALAD 2: Creamy Broccoli Bacon Salad with Pecans, Cranberries, Raisins
