Here is my selection of 7 weeknight meals + 3 Fall salads for next week (November 11-17, 2024)!

DAY 1: Chicken Feta Pasta​​

DAY 2: Creamy Butternut Squash and Sausage Soup with Orzo and Spinach (30-Minute, One-Pot)​

DAY 3: Thai-inspired Coconut Curry Salmon (30 Minutes, ONE-PAN)​

DAY 4: Baked Ranch Chicken with Broccoli and Bacon​

DAY 5: Creamy Pork Tenderloin Medallions with Orzo, Spinach, and Mushrooms (30 Minutes, One-Pan)​

DAY 6: Scallop Spaghetti in Creamy White Wine Butter Garlic Sauce with Capers (you can also use shrimp)

DAY 7: ONE-PAN Basil Pesto Tomato Mozzarella Chicken Bake​

SALAD 1: Sweet Potato & Spinach Salad with Apples, Cranberries, Pecans, Pumpkin Seeds, and Feta Cheese​

SALAD 2: Apple Spinach Salad with Honey-Mustard Lemon Dressing​

SALAD 3: Roasted Brussels Sprouts and Maple-Cinnamon Butternut Squash with Pecans and Cranberries​
