🧡 Meal Plan for October 14-20, 2024 🧡 7 Dinners + 3 Fall Salads 🧡


Here is my selection of 7 weeknight meals + 3 Fall salads for next week (October 14-20, 2024)!

DAY 1: Autumn Chicken Dinner with Roasted Vegetables (Butternut Squash and Brussels Sprouts), Tortellini, and Garlic Butter Sauce

DAY 2: Pork Chops with Apples (caramelized with butter, brown sugar, cinnamon, and honey)

DAY 3: Creamy Chicken and Gnocchi with Spinach and Mushrooms (30 Minute, One-Pan Meal)

DAY 4: Thai-Inspired Coconut Curry Shrimp (30-Minute One-Pan Meal)

DAY 5: Creamy Sausage Rigatoni with Spinach and Tomato Sauce (30-Minute One-Pan Meal)

DAY 6: Greek-Inspired Roasted Spaghetti Squash with Chicken, Tomatoes, Spinach, and Feta Cheese

DAY 7: Baked Chicken Meatballs with Creamy Butternut Squash and Spinach Orzo (you can also use store-bought meatballs of any kind: chicken, sausage, plant-based)

SALAD 1: Apple Spinach Salad with Pecans, Goat Cheese with Maple-Lime Dressing

SALAD 2: Arugula Salad with Apples, Cranberries, Pecans, and Balsamic Dressing

SALAD 3: Cranberry Spinach Salad with Cashews, Goat Cheese, and Lemon-Honey Poppy Seed Dressing
