🎃 Meal Plan for Nov. 10-16, 2025 🎃


It’s time for another meal plan! Here are my dinner (and salad) picks for the week of November 10–16, 2025. I also have 3 brand-new holiday desserts: Cinnamon Pie, No-Bake Mocha Cheesecake, and (Drumroll...) healthy Chocolate Orange Tart!

A lot of thought went into developing this no-bake chocolate tart—making sure it’s healthy, allergen-friendly (vegan, dairy-free, and gluten-free, with no flour at all—not even GF blends), yet still appealing to everyone and absolutely stunning. It tastes (and looks) like a dessert from a high-end restaurant but is very easy to make (no oven required!). Perfect for Thanksgiving & Christmas! All my new desserts are at the bottom of this newsletter!

DAY 1: Creamy Chicken Orzo with Spinach, Mushrooms, and Basil Pesto (One-Pan, 30 Minutes)

DAY 2: Hungarian Mushroom Soup (with sour cream)​

DAY 3: Lemon-Caper Salmon Piccata (serve with orzo, couscous, angel hair pasta, rice, or any other kind of pasta)

DAY 4: Roasted Stuffed Pumpkin (or Acorn Squash) with Italian Sausage, Spinach, Apples, Feta, Cranberries, Pecans (I used small edible pumpkins about 6 inches wide: pie pumpkin or sugar pumpkin. You can also use acorn squash.)

DAY 5: Beef Bulgogi Bowls (Korean BBQ Meat) with Rice, Kimchi, and Green Onions

DAY 6: Shrimp Asparagus Bacon Pasta with Pine Nuts and Lemon-Butter Parmesan Sauce​

DAY 7: Braised Pork Ragu Pappardelle (slow-braised pork shoulder in a tomato and red wine sauce, tossed with wide pasta - can also use fettuccine)

SALAD 1: Apple Cranberry Spinach Salad with Cashews and Balsamic Vinaigrette​

SALAD 2: Beet & Spinach Salad with Mandarin Oranges and Honey-Mustard Lemon Dressing (you can use boiled, roasted, canned, or pickled beets)

SALAD 3: Butternut Squash and Spinach Salad with Pecans, Cranberries, Pomegranate Seeds, and Poppy Seed Honey-Lime Dressing

DESSERT 1 (NEW): Brown-Sugar Cinnamon Pie (with whipped cream)

DESSERT 2 (NEW): No-Bake Mocha Cheesecake​

DESSERT 3 (NEW): Healthy Chocolate Orange Tart for Thanksgiving and Christmas. It's vegan, dairy-free, gluten-free—no flour (not even GF flour).
