Itโ€™s time for another meal plan! Here are my dinner (and salad) picks for the week of November 17-23, 2025. We're 12 days away from Thanksgiving!

DAY 1 (NEW!): Braised Short Ribs with Red Wine Sauce, Mushrooms, & Creamy Yellow Polenta (DAIRY-FREE, GLUTEN-FREE). Make it in the oven, in an Instant Pot, or in a Slow Cooker.

DAY 2 (NEW!): HEALTHY Lemon Chicken Tortellini Soup with Spinach & Mushrooms (One-Pot, No Cream)

DAY 3: Butternut Squash and Spinach 3-Cheese Lasagna (can be made ahead. You can also use canned pumpkin puree.)

DAY 4: White Chicken Chili youโ€™ll make on repeat!

DAY 5: Asian Beef with Mushrooms and Snow Peasโ€‹

DAY 6: Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage (30 Minutes, One-Pan. You can also use canned pumpkin puree)

DAY 7: Chicken Thighs with Creamy Bacon Mushroom Thyme Sauce (KETO, high-protein, low-carb, gluten-free)

SALAD 1 (NEW!): Winter Pear Salad with Walnuts and Honey-Mustard Dressingโ€‹

SALAD 2: Strawberry Spinach Salad with Blueberries, Feta, Pecans, Balsamic dressing (holiday colors!)

SALAD 3: Roasted Brussels Sprouts Salad with Maple Butternut Squash, Pumpkin Seeds, and Cranberriesโ€‹
