Here is a selection of 7 weeknight meals + 3 healthy salads for next week (Jan. 13-19, 2024)! I've chosen recipes that are on the healthier side (packed with veggies and protein-rich)!

DAY 1: Shrimp Tomato Spinach Pasta in Garlic Butter Sauce

DAY 2: Chicken with Bacon Mustard Sauce

DAY 3: Salmon (or Trout) with Lemon Garlic Caper Sauce

DAY 4: 30-Minute ONE-PAN Pesto Chicken and Veggies (Asparagus, Sun-Dried and Grape/Cherry Tomatoes)

DAY 5: 30-Minute Sausage Orecchiette with Spinach and Tomatoes

DAY 6: Mediterranean Chicken with Sun-Dried Tomatoes, Artichokes, and Capers

DAY 7: Pork Chops with Caramelized Apples and Brown Sugar, Cinnamon, Honey, and Butter Sauce

SALAD 1: Apple Spinach Salad with Honey-Mustard Lemon Dressing

SALAD 2: 15-Minute Greek Salad

SALAD 3: Blood Orange Green Salad with Feta Cheese and Honey-Lemon Mustard Dressing
